Pineapple Cake w/ Cream Cheese Icing

Pineapple Cake w/ Cream Cheese Icing
2 cups flour
2 cups sugar
2 tsp. baking soda
1/4 tsp. salt
2 eggs
20 ounce can crushed pineapple in juice
1 tsp. vanilla

Mix all ingredients together until smooth. Pour mixture into a greased 9x13 baking dish and bake in a 350 degree oven for 25-30 minutes or until a toothpick comes out clean.

Icing
8 oz cream cheese
4 Tbsp Butter
3 cups of confectioners sugar
1 tsp. vanilla

Beat butter and cream cheese until smooth and creamy. Add vanilla to the mixture. Slowly add sugar and mix on low. Ice cake while still warm. This is a very rich cake so be prepard when cutting portions.
